Christmas is the time of year that we are encouraged to indulge, from turkey to gammon, there is often a lot of meats and side dishes that we are lucky enough to gorge ourselves on. Often you find your fridge crammed for days after with leftovers and, while you might be sick of nibbling on dry turkey meat by now, these meats and side dishes can be transformed into awesome meals for breakfast, lunch and dinner.

Dinner

Gammon has become a popular staple on the dinner table over the festive season and it often makes a second appearance on sandwiches for days after the event due to the amount that is left over.

This Carbonara recipe is a great way to use up leftover gammon in a much more exciting way than between two slices of bread.

Tip: chop the gammon into cubes or shred and let marinade in olive oil for an hour or so before cooking to keep it from drying out.
