Citrus And Chilli Marinated Olives

With winter creeping in closer and closer, it’s a great time for red wine and snacks by the fire and what better snack to pair with your wine…yip you guessed it, olives of course!

While olives are great right out of the jar, marinated olives are packed with flavour that compliments these little salty gems and we’ve found a great spicy and zesty olive marinating recipe to lift the spirits on those chilly days.

The recipe we found from The Bon Appétit Test Kitchen calls for mixed inexpensive olives but I think that the better the quality the better the flavour but we will leave it up to you, whatever olive takes your fancy will work.

Ingredients

SERVINGS: MAKES 2 CUPS

2 cups olives (your choice)

1/2 orange, quarted into wedges and thinly sliced

1/2 cup extra-virgin olive oil

3 garlic cloves

1 tablespoon crushed coriander seeds

2 bay leaves

1 small red chilli, halved lengthwise (feel free to add an extra chilli if you like it hot)

Preparation

Place the olives of your choice in a bowl with the orange. In a small saucepan over low heat, combine the extra-virgin olive oil, garlic cloves, crushed coriander seeds, bay leaves, and the red chilli. Cook until fragrant and garlic begins to brown, about 20 minutes. Remove pan from heat and let steep for 1 hour. Pour oil mixture over olives and stir to coat. Marinate at room temperature for 2 hours, or cover and chill up to 4 days. Bring to room temperature before serving.
