This short video (less than 5 minutes) by National Geographic gives an excellent overview of how olive oil is made, from harvesting through to bottling.
What’s really great about the video is that it compares traditional methods of olive oil production to modern methods and explains the advantages of modern methods which include less heat, less oxygen, and less time. These are all enemies of good olive oil and you can read more about that here.
